My Xbox 360 is 100% up to date, and I have had to move my modem recently, and I'm trying to use a phone/fax cord in place of the Ethernet cord since the Ethernet cord I have isn't long enough. It's not picking it up though. Am I doing something wrong, or does the fax/phone cord just not work as an Ethernet cord?

No you can't. Simple answer. The reason is that Cat cable was designed to transmit a lot of data at a high speed where phone lines can transmit the same data just a lot slower. Also because the phone cable wont fit in the ethernet port.

You cannot use a phone cord as a Ethernet wire. it cannot transmit that much data over phone wire

Ethernet has more stands of individual wire than a telephone wire can and the connector is fatter than a telephone wire.

No. There are several technical reasons, but the biggest (most obvious) is that phone cables only have 4 wires, and ethernet cables have an 8/wire connection.

Phone wires can transmit that much data but it has to be through a modem but an Ethernet port requires an Ethernet cable
