For Windows there is CamStudio. Works fairly well.

Why hello there, I recommend Camstudio as I have experience with it, although I recommend the beta of it. (Theres a 4 gb. limitation for .avi files. When using the Camstudio lossless codec this limitation is apparent if you record for extended periods. The Beta version of Camstudio handles compression much better though.)

For Windows CamStudio's no doubt the best, you can have the option to record a specified part of your screen, and/or the full screen, and it has suto panning features, but no zooming features, and you can always use a video editor like Wax 2.0 to give you thoughs zooming effects.

If you're a Linux user you can try out gtk-recordMyDesktop, or Kazam Screencaster. I personally like Kazam better, but it differs between person to person, and yes the same applies for recording as the one above, but in Kazam you'll have a 5 second countdown timer, so it'll tell you when it'll start recording, and get you ready :D

Now I've never touched nor seen a Mac, but you may also wanna take a look at these 4 web based screencasting tools, if you don't use the operating systems above, or if you do, and don't like them, here's some other ones you may enjoy!

Screenr ScreenToaster ScreenJelly and Screencast-o-Matic

I can't remember which ones have a certain time limit like 5 minutes for recording, 10 minutes, etc: I do know you can export in HD, and YouTube with ScreenToaster, you can also have the ability to record your webcam on it as well, and they all have the option to record a specified selection of your screen as well as fullscreen, and also just the CamStudio if you record a selection of your screen, and want to move it, but without having autopanning enabled you can click and drag the corners to move it where you'd like to record.
