I'm looking to buy a new desktop Mac in the near future, however, I don't want the all-in-one iMac. My only options left are the Mac Pro and Mac Mini - two very different computers. I'm going to be doing a lot (but light) video editing, browsing the web, using Photoshop etc. I want a very fast experience (near immediate opening times). Do you think Apple will include a Core i5/ i7 Processor or something better in the next update of the Mac Mini or should I go with the Mac Pro?

The only issue with putting a Core i5 for Apple will be that they will be forced to use Intel's graphics solutions. They are doing great with the NVIDIA chip, but that's only because there is no Intel GMA in the Core 2 Duo they are currently using. I don't expect Apple to put a discrete graphics card in there, so until Intel offers the i5/i7 processor without the Intel GMA, don't expect to find one in there.

Why would they be forced to used an Intel GPU? The MacBook Pros have i7's and i5's and their primary GPU is nVidia.
