I have a dual monitor setup, which both use vga, and have a mac mini. It has a HDMI and mini displayport. I have a mini displayport to vga on one, but there is no HDMI to VGA adapter. Could I use the included HDMI to DVI, then a DVi to VGA adapter attached to that?

I believe that is not really possible, the hdmi streams digital only signals and the VGA is an analog signal and although there are adapters that will let you convert the DVI to VGA, the analog signal will not be there to be able to use with a VGA signal
