Do you mean you want to put movies on your iPhone to watch? That has always been a feature, and has nothing to do with AirPlay. Just put what ever movies you want (So long as their the right format), and sync.

Yes, but the issue is I have over 50GB of movies/shows, and I would like to access all of them on my iPhone. Similar to how you can wirelessly sync your movies to your Apple TV, I don't understand why I can't do this with the iPhone.

There are apps available that can stream your media library from your computer to your iPhone so long as its connected to 3G. I used Plex, its available on Mac, PC and iOS and you can stream all TV shows, Movies and Music as long as they don't have DRM protection.

It can be done. There are apps for the iphone that will let you do this. Here is a good free one <http://itunes.apple.com/app/airview/id412370918?mt=8>. The other thing you will need is iTunes, which I surely bet you have.
Open itunes and select the video you want to play, then fire up the app and itunes will show a airplay box if both devices are on the same network.
