At what point do you split a server to dedicated services servers?

I know that you could just install a NOS onto any server and it could do all tasks. But at what point do you get a dedicated print server, file server, database server, DHCP server,....?

Edit: Sure you could say when the workload gets to much for a single server to handle but you could also get a better more capable server.
