On my Tumblr site, I have Google Analytics enabled, and sometimes I go throughout my site to make sure everything works and there are no broken links. When I do this, does Google Analytics track my visits, or because I am signed into said account, does it ignore me?

You have to tell Google Analytics not to track your visits. How to Stop Google Analytics From Tracking Your Own Visits.

There are Wordpress plugins that just hide the tracking code when you're logged into the account, but I don't know of anything like that for Tumblr.
