I've found it to be corn syrup with red and blue food colourings mixed together to make a nice blend of colours. Added water too so it's of a nice consistency.

Pancake syrup with a little bit of water and some red food coloring works really well. Adding blue sometimes helps too, depending on the situation of the scene.

depends on the film really. In sweeney todd they used an orange mixture close to paint. in evil dead they use corn syrup and red food coloring. jackie chan's old stunt team would mix corn syrup, cough syrup, and red food coloring. If they need a river of blood it might be red water or a type of juice. for little mouth cuts there are blood capsuls you can buy at costume stores. it's all about creativity really.
