In my computers BIOS I get the options to change the Asset Tag, Ownership Tag and the UUID. What are these tags and what are they used for? Thank you.

Actually you shouldn't have the option to change it unless you have a system that the vendor forgot to lock those fields . Those are used by the vendors diagnostic software and even their support website to determine what motherboard and what was installed at the time of pursuance. It is actually nice when Dell for example knows what I bought when I am looking for drivers, support documentation or other info if ever needed.
If these fields are actually unlocked I honestly would call the manufacture if you change it to something they do not have in their database they can't provide accurate support for you as a customer.
