How much faster is difficult to say. A really fast SSD would be a waste in any mac because they don't support the higher speeds. (above 3Gbit/s)

I once measured starting time of WoW on HDD vs SSD. Time from launch til in the game was about 60 seconds on an HDD, 14 seconds on an SSD. Loading time of heavy applications like Photoshop and the likes will also dramatically decrease. You can look at the pure speed of an SSD; mine is 550/500 MB/s read/write versus a typical 50-80MB/s HDD. But the main performance boost is it's incredible increase in IOP performance. Because there are literally no access time, loading many smaller files gets a huuuuuuge performance boost. Also if you have a lot of startup programs why will load much faster.
