I really need some advice to know witch Mac should I go with. I really need it for 1080p HD video editing mainly in Adobe After effects and Adobe Premiere. And I was wondering if the 2011 Mac Mini Quad-i7 2.0GHz "server" with 8Gb ram and the Intel HD Graphics 3000, is it any good? Which for me... seems the the cheapest way. But the most worried part is the Graphics card, has 384MB DDR3 SDRAM (shared with main memory). Do I really need a MacBook Pro? or an iMac? or should I go with the Mac Mini. For my budget the Mini would be the best option...

The Graphics will let you down. You need to focus more on the card for video editing.

NO!!! The graphics card is super important and Intel 3000 will disappoint.

thank you for the answers guys...! Still not gonna give up searching for a product that... is good for editing... and also not so expensive. Now I just wonder if the 15" Macbook Pro with: Intel Core i7 2.2GHz quad-core, HD 3000 384MB Graphics nTelos DDR3 SDRAM shared with main memory and the AMD Radeon HD 6750M with 512MB dedicated video memory GDDR5... Is it enough?

That will be significantly better. However, if you want to edit, you really want something with a non mobile graphics card. This isn't a must, but it would be much better. The only mac that offers this is the Pro, but a custom PC could be configured however you want it.
