The PS3 does not offer display spanning, the videocard only supports a single output, the closest it can get 2 displays is the multiplayer mode where if your tv supports passive 3d, you can get 3d glasses where 1 set has horizontally polarized and another vertically and 2 players can each enjoy full screen gameplay (for some 2 player FPS games)
The PS3 can do 3d easily enough because it does not require much extra memory usage since the resources for both views are the same it is just pushing twice as many pixels (the games that do this are not true HD and use lower resolution textures in order to be easy enough on the hardware to allow this)

I don't think that the ps3's video card can support three monitors. Splitting the hdmi would give you the same signal times 3. You would have three mirrored displays. You can easily have three monitors on a pc, but consoles use mobile graphics technology that is designed to process much less. This is also why most console games don't support the graphics options such as multisampling that are available on PC.
Wow. Now that I look at my reply, I see that it looks like I am a PC gaming fan boy. I would like to add that I play console too. Especially for games that aren't available on PC such as the recent additions to the halo series.

A couple of console games like Gran Turismo 5 can support multiple monitors if you have the right equipment.
In order to do this however, you need 3 monitors, 3 copies of a game that supports this feature, and 3 separate PS3 consoles connected on a LAN. You cannot use more than 1 monitor on a single PS3.
To use the multimonitor feature, you need the same number of PS3 units and copy of GT5 as the number of monitors. All PS3 systems running GT5 must be updated to the latest version of the game. The PS3 systems running the multimonitor setup must be connected through LAN, connected together through a high-speed switching hub.
