How do you record what you hear in Windows 7?

You can use Audacity, or any audio recording software of your choice.

Use Audacity, and select "Stereo Mix" for the recording device. If it's not there, go into the start menu search for "sound card" and select "Sound Card Settings". Then go to the recording tab, right click and select "Show Disabled Devices" and hit apply.
