For some reason, when I click on cut/pasted code it makes a thick, black blinking text bar, and every time I want to edit the code, it deletes a letter every time I add a new letter? What the heck?

Have you tried hitting the insert key on your keyboard by any chance. Seems like you may have hit it once before. And it will cause to delete one character to the right every time you enter a new character from the keyboard.

you have overlay turned on, hit the insert key to put it back in insert mode

You should see INS in the lower right corner, you are probably seeing OVR now

It is a common rookie mistake we all have made at some point, this goes for almost any IDE
