I've tried many types of programming but I feel each time as if I've started in the deep end but am desperate to program !

Not sure what you're expecting as a reply here. Google "programming courses online", pick one and follow it through if you see programming as an end in itself and want to be thoroughly versed in it. If you're only interested in iMac, simply tag that onto the end of the search term for courses based on Cocoa.

Learning to programing is going to take a while it's one of those things where you have to know everything before you know anything. If you want to start making simple programs, look into some form of BASIC (like Visual Basic). You can't do anything really fancy with BASIC, but it does have the fundamentals of programming.
