Just finished dressing up the turkey and putting it in the oven. Making a healthier fare this year, with mashed cauliflower instead of potatoes, and I'm thinking of passing on the gravy. Have a feeling I'll have a craving for gravy this weekend, though, and find myself making some mashed potatoes to go with it.

Can I safely preserve the giblets so that I can make the gravy on another day? Can I cook the giblets now, put 'em in the fridge, then do the hours-long simmering with the gibs tomorrow?

You can but save the water you cooked them in to complete the cooking in later or you will loose a bunch of flavor

So I have to still at least saute the giblets and then simmer them for hours?

If you are going to just saute them today then you will be fine. I normally just simmer them. As long as they are cooked they will last just as long as any other leftovers in the fridge. The bonus is that if you saute them then you don't need to save the simmer water.

I save them after thanksgiving usually putting them in the freezer but I think putting them in an airtight bowl/ bag will be the same in the refrigerator.
