I have a Mac mini Late 2012 model with the Intel Core i7 2.3GHz CPU. I want to add a SSD as my boot drive and keep my 1TB HDD as a secondary drive and max out the RAM to 16GB. I was thinking of going with OWC for their data doubler kit along with their Mercury EXTREME Pro 6G 240GB SSD and 16GB 1600MHz RAM chips.

What do you think? Recommend any other vendors?

RAM I always got for Crucial. OCZ do some things ok and some things badly.
