Will this delete my YouTube account?

If I click "remote" does that just disconnect my gmail from the YouTube account, or does it delete the account? It has Twitter there as well, so I assume that means it just unsyncs the accounts, but I am very into my YouTube life. I don't want to lose my videos.

No. Connecting your Google account is simply just using your Google Account with Youtube. Google owns youtube, and they are just trying to better your Youtube experience by connecting all its services together. Connecting the Google account to the Youtube account will not do anything to delete your youtube account, or any videos you may have on the account.

However, When connecting, Youtube may ask you if you want to change your youtube name to your real name. Of course you do not need to do this, and you can simply decline this if they were to ask you.

Removing the account, well, click on it, and see what they say. They usually warn you before you are about to delete anything. But I don't believe that it will delete your account. Usually there is a separate button for that if you were to want to delete your account.
