I understand it would be cool to get a new operating system, but are there actually any major benefits to using Ubuntu on a phone or tablet? Is it just user interface?

Android is based on something similar to the JVM console (Java Virtual Machine). Having something like Ubuntu on the phone skips the need for a Java like virtual machine to run the phone

This is true to what Kevinlockergnome is saying. And with Ubuntu being in there since it is based on Debian Lunix. Its running linux on there and there is no java virtual machine when running the applications.
