I was thinking about replacing the DVD drive with a Blu Ray drive to watch Blu Ray movies. Since it will NEVER be compatible for the Mac, I decided to retrofit our HP PC outside. Will it work though? It is an HP Pavilion Slimline, AMD procesor, 64 bit, running windows 7 and only a year old.

you can, i'd first make sure that the PC your going to hook it up to is powerful enough to play bluray or high definition movies (if that's your intention), because older systems can struggle (especially if you never update the drivers for graphics).
Big Buck Bunny is a good way of finding out if your system might struggle with the higher resolution video, switch it to 1080p and full screen it, see how smoothly it plays all the way through, watch it all the way through because it tests different processing abilities of your graphics card at different parts of the video.
