Try using Audacity.
You should be able to just open it and then choose File>Save As and then selecting the .mp3 format. If it won't open then it probably has DRM which makes things a little more difficult but not impossible.

turns out the best way to do it is by removing the DRM through Tune4Mac however the software costs about £20 which exceeds the value of the audiobooks i need to convert, so i'll just purchase them again and be done with it :p using Audible to do it and the good thing is after signing up to a month trial i got a free download before cancelling it lol so at least i saved on re-purchasing one book, cheers for the help but i really do wish there were a simple inexpensive option to get around the DRM or preferably extend the DRM to include Android devices or at least the most popular ones which would make sense :p
