Is it okay to use a audio/video receiver that puts out 105 watts per channel to bookshelf speakers that can take a maximum of 120 watts?

Its generally a good thing when speakers can deal with more then the AMP can put out, this will prevent you from blowing them. The rest is basicly just "matching". Its pointless to put really expensive speakers on a cheap amp and vice versa. To me this combination looks good, but i'm not an infallible expert.
