what exactly is the difference between prison and jail?

Prison is more long-term, but better food. Jail is where they keep you until you see the judge, but the food sucks. (Don't confuse Jail with a holding cell, holding cells are at the police station, jail is a separate building).

Don't ask me how I know about the food...

Eric's statement is basically correct, however, there is technically no real difference between jail and prison. In fact, many prisoners are often held in local jails for long term stays when prisons become overcrowded.
