I always freeze up when I get asked this question. Especially with simple jobs that do not require any skills like customer service. The only thing I can think to say is "Because I am amazing".

Why should I hire you? The easy answer is that you are the best person for the job. And dont be afraid to say so. But then back it up with what specifically differentiates you.
For example: You should hire me because Im the best person for the job. I realize that there are likely other candidates who also have the ability to do this job. Yet I bring an additional quality that makes me the best person for the job--my passion for excellence. I am passionately committed to producing truly world class results. For example . . .
Are you the best person for the job? Show it by your passionate examples.

Job interviews are one of those occasions where you're supposed to speak highly and favorably about yourself in a social situation. When an employer asks you that question you want to respond with an answer that makes them feel as if they'd be missing out or would hinder their company by not hiring you. Tell them which of your abilities and experiences will enhance the company and how having you on board would benefit everyone at the workplace. Use emotion and emphasize words that describe how much you want the position. Let them know that you're a very motivated and dedicated individual that works diligently and always puts in complete attention in everything you do. Words are very, very powerful tools; be sure to practice your own responses before going to interviews as well. Be prepared and don't be nervous, everyone goes through it.

Tell them why you are good for the job...
"You should hire me because I don’t need to be trained and have a proven track record. I have more than (blahh) years of experience related to this position. More than six of those years have been in management positions similar to the one available here. In my last position, I was promoted three times in the six years I was there. I most recently had responsibility for supervising a staff of 15 and a warehousing operation that processed over 30 million dollars’ worth of materials a year. In the last two years, I managed a 40 percent increase in volume processed with only a 6 percent increase in expenses. I am hardworking and have earned a reputation as a dependable and creative problem solver. The opportunities here excite me. My substantial experience will help me to know how to approach the similar situations here. I am also willing to ask questions and accept advice from others. This willingness will be an important factor in taking advantage of what has already been accomplished here."
This is your time to boast and make yourself look good, tell them about all your qualifications related to the job, tell them what you've done, tell them that they wont find anyone more qualified then you.

Although I no longer face the daunting prospect of having to apply for a job, when I did it was no problemo. I simply stated that I was the best person for the job, which I also happened to believe. While living on the streets of San Francisco (literally), I filled out an application at Manpower. I was told to give them a call later. When I called back that afternoon, the person answering the phone said to call back in two weeks, as there was nothing available at the moment. I told her that she had better take a good look at my application, because it was the best one she'd ever gotten or was likely to get. When she came back on the line, she asked if I would mind working in the offices at UnoCal. I went to work the next morning and stayed there until I returned to Florida, living in missions the entire time.

A lot of what the people are saying is true. You have to speak greatly of yourself, because this is the time to brag about yourself, to make you sound more interesting than you actually are, so they think high of you. That way you get hired.

Just Smile a little (not too much)
I just felt the question like "Why Should You Have a Child Born"? The answer is you like to have a child to expand your family, take care of you in future, stand for you and for your family till the end.
Similarly, you should hire me, so that I can contribute for the growth and success of your company with my proven skills and track record experience in the field. I can standup and face challenges in my career and would like to hold higher responsibilities later on and then would forecast my future working for your company in Sr Departments. Thats why I would like to be hired.
