Is there any way to add PDFs to iBooks from the iTunes control panel you get when you plug in your iPod Touch/iPhone/iPad?

Yes, you can just drag and drop PDF files onto the iBooks section of your iPod Touch/iPhone/iPad. First you will need to download the iBooks app.
