I have been looking at the latest core i7 from Intel, and I was wondering if I could upgrade my 2009 iMac to it?

no you couldnt, the core 2 duo, if thats what you have is a different socket as is the i5 and i3 and also, it is rather hard to open up an iMac, and then there are power and heat issues, but im not sure about that. in short its impossible

You cannot upgrade the CPU's in Macs. Any of them, even the Mac Pro. Apple welds the CPU to the motherboard.
