You lay out in the sun and you get tan and get darker. But your hair gets lighter? why?

The sun kills the pigment in the hair, bringing it closer to gray.
The sun burns the skin, largely thanks to all the oils (both natural and applied).
Of course the solution to both is to stay out of the sun :)

Because skin and hair are two completely different things they are obviously going to react differently to heat.
